1. GENTLE INFUSION OF GREEN TEA AND STEVIA
It all starts with a gentle, hot infusion. We brew our organic green tea and organic stevia leaves between 70 and 75°C, an ideal temperature to preserve the antioxidants, polyphenols and plant freshness of the tea. Stevia, on the other hand, naturally adds a sweet note without sugar.

2. LIVE AND CONTROLLED FERMENTATION
We then add our SCOBY (Symbiotic Culture Of Bacteria and Yeast), a symbiotic culture composed of Yeasts which transform the sugar into a small amount of alcohol, and Acetic Acid Bacteria, which then transform this alcohol into organic acids good for digestion and the balance of the microbiota.
This natural fermentation lasts between 6 and 10 days, at a controlled temperature (24–29°C), away from light. -
3. ORGANIC NATURAL FLAVORS, THE SIGNATURE TOUCH
Once fermentation is complete, we add our natural flavors from organically grown fruits: raspberry, lemon, ginger, pomegranate... Each recipe has its own personality, always fresh, fruity and well-balanced.

4. ADDITION OF BACILLUS COAGULANS – FOR A STABLE BENEFIT
To enhance the benefits of our drink, we add a strain of Bacillus coagulans, a resistant probiotic capable of surviving canning conditions and gastric acidity. It helps maintain a balanced intestinal flora, even in a stabilized drink.

5. STABILIZED, BUT NEVER PASTEURIZED
Cool Steep is filtered and stabilized, but never pasteurized.
This helps preserve live probiotics, natural organic acids, and most importantly, the lively, vibrant character of the drink.
