Manufacturing process

  • 1. GENTLE INFUSION OF GREEN TEA AND STEVIA

    It all starts with a gentle, hot infusion. We brew our organic green tea and organic stevia leaves between 70 and 75°C, an ideal temperature to preserve the antioxidants, polyphenols and plant freshness of the tea. Stevia, on the other hand, naturally adds a sweet note without sugar.
  • 2. LIVE AND CONTROLLED FERMENTATION

    We then add our SCOBY (Symbiotic Culture Of Bacteria and Yeast), a symbiotic culture composed of Yeasts which transform the sugar into a small amount of alcohol, and Acetic Acid Bacteria, which then transform this alcohol into organic acids good for digestion and the balance of the microbiota.
    This natural fermentation lasts between 6 and 10 days, at a controlled temperature (24–29°C), away from light.
  • 3. ORGANIC NATURAL FLAVORS, THE SIGNATURE TOUCH

    Once fermentation is complete, we add our natural flavors from organically grown fruits: raspberry, lemon, ginger, pomegranate... Each recipe has its own personality, always fresh, fruity and well-balanced.
  • 4. ADDITION OF BACILLUS COAGULANS – FOR A STABLE BENEFIT

    To enhance the benefits of our drink, we add a strain of Bacillus coagulans, a resistant probiotic capable of surviving canning conditions and gastric acidity. It helps maintain a balanced intestinal flora, even in a stabilized drink.
  • 5. STABILIZED, BUT NEVER PASTEURIZED

    Cool Steep is filtered and stabilized, but never pasteurized.
    This helps preserve live probiotics, natural organic acids, and most importantly, the lively, vibrant character of the drink.
    A lively, balanced and meaningful drink, for the body as well as for the mind.
